Ghana-style Crepes Pancake Recipe Plus Useful Tips For Crispier Edges!
Ghana pancake is a street-food version of the famous French crepes. It’s smaller in it’s conference, tastes more of aromatic nutmeg than vanilla with a slightly more yellowish tint. It’s not commonly found on most streets as compared to other sweet dough based snacks like bofrot/boflot/ballfloat etc. Perhaps the ingredients being pricey are a detterent for some street food vendors. Finding one such vendor is similar to a nudge from one of your ancestors reminding you to take yourself back into your childhood days.
I used to live a street up from a pancake vendor who made these absolutely fabulous pancakes in a pan over hot coals. You could smell the pancakes a street away! I made this video of her a few years ago.

It takes less than 20minutes from start to finish for the recipe and i highly recommend you make extra to store in the fridge for the kids who are currently on long vacation. It’s super handy for hungry little tummies! It also makes 10 crepes in total depending on the size of your pan.
Ingredients
1 cup of all-purpose flour
1/2 cup of milk
2 1/2 tbsps sugar
1/2 cup of water
2 tbsps of melted butter
2 eggs
1/2 teaspoon vanilla
pinch of nutmeg
pinch of salt
*Yellow food color (optional)
Makes 10 crepes
Prep time: 5-8 mins Cooking time: 10-15minutes
Cooking Equipment:
Non-stick round cooking pan
Spatula
Whisk/fork
Deep bowl
Cooking instructions:
Into a deep bowl, measure 1 cup of flour , sugar, a pinch of grated nutmeg and also a pinch of salt.
Mix all the wet ingredients by combining milk, water, eggs, vanilla and melted butter into a separate bowl. Whisk till frothy.
Gradually pour flour into the wet ingredients whilst stirring to get a smooth light batter.
Heat an omelette pan over medium-high heat with little oil covering both the sides and the base of the pan. Use a cooking spray if you have one.
Once the pan is hot, using a ladle spoon pour a portion into the pan whilst swirling the pan around to spread the batter over the entire base.
Lightly scrape the crispy edges to loosen the base of the crepe using a spatula. Wait about a 60 seconds and flip.
Give same seconds to the other side and slide the crepe into a plate.
Enjoy as a snack or with breakfast tea.
It’s crispy on the edges, lightly sweet, beautiful aroma and bound to give you an unforgettable breakfast. Pair it with fresh fruits and a hot cup cup of freshly brewed tea!
Cooking Tips.
Always ensure the pan is hot enough before adding the batter. Test the heat of your pan by dropping a few water droplets in. This must sizzle immediately.
You can switch melted butter with 2 tablespoons of oil.
If the batter turns clumpy, add a few spoons of water to lighten it and crush those lumps using the back of a spoon.
Make the savoury version by taking out the sugar, nutmeg and vanilla. Savoury crepes can be stuffed with shredded chicken or fish, scrambled tofu and any vegetable mix of your choosing.
Store any leftovers in the fridge and simply microwave before eating.
